Monday Meal

Hi there.  Hope you all are doing well!

Monday we had pork chops and butternut squash.  The exciting part?  We made the pork chops on the grill!!  I was so excited to take the cover off and start it up.  Grilling is so easy, salt and pepper and toss it on!  Unfortunately, since then we’ve received about 4 inches of snow so the cover is back on and probably will be for a few more weeks.  I’m just glad we got out there while we could.

I made the butternut squash in the oven, it’s really simple.
Cut the squash in half and scoop out the seeds.  Season with salt and pepper and drizzle with olive oil.  Pop it in the oven, cut side down for about 30-35 minutes at 425 until you can stick a fork through the skin and squash easily.

Then scoop out the squash in to a bowl.  Mash with a potato masher or fork until it starts t look like mashed potatoes.  You can eat it plain from this point if you like, but we added a little bit of butter and brown sugar:)

Our pork chops and shallot (sauteed in oil to top off the pork chops) are both local Minnesota products.  Pork chops from Clancy’s and the shallot was from the Co-op, grown in Iowa.
