Caprese Pasta

The summer heat has definitely turned on and standing over a hot grill in 95 degree heat (or 105 with heat index) isn’t always the best way to end the day.  With tomatoes starting to pop up making caprese pasta has been an easy light dinner when we just can’t take the heat.

For 2 servings:
8 cherry tomatoes, quartered
handfull of mini mozzarella balls (in this case 10)
5-6 leaves of fresh basil sliced thin
pasta of your choice
olive oil
salt and pepper

Cook the pasta according to the package directions,  and drain.  While the pasta is still warm toss in the tomatoes, mozzarella and basil.  Drizzle with olive oil and add salt and pepper to taste.  Enjoy!
